SWEET POTATO LADDU-SIHIGENASU LAADU – ಸಿಹಿಗೆಣಸಿನ ಲಾಡು

Sweet Potato/Sihigenasu is sweet root vegetable, starchy, full of fibre, minerals, vitamins. They are available in various colours. They are rich in beta-carotene.

Sweet potatoes/Sihigenasu can be added to our diet easily. It is very easy to cook. Can be consumed with or without skin, boiled, steamed, roasted, cooked in various form.

It is very easy to grow at home too in pots, in any containers like atta covers, grocery covers, cleaned paint buckets etc.,

Various recipes can be done.

As it is sweet root vegetable goes well for any type of dishes. sweets, curries, chips, wedges many more.

Today we shall see the procedure of preparing sweet popular dish laddu/laadu.

Ingredients :

Sweet Potato500 gms
Sugar (powdered)¼ cup
Rice Powder2 tsp
Cashew Chopped2 tsp
Almond/Badam chopped2 tsp
Raisins 2 tsp
Ghee3 tbsp
Elaiahi/cardamom powder¼ tsp
Dry coconut finely grated
(without outercover)
OR
Desicated Coconut
½ cup

STEP 1 – COOKING SWEET POTATOES

Wash sweet potato, cut into 2 halves. Add a glass of water and cook it in a pressure cooker for 2-3 whistles.

When cooker is cooled, remove the skin and mash it smooth.

STEP 2 – COCONUT POWDER

(IF YOU ARE USING DESICATED COCONUT YOU CAN AVOID STEP-2)

Grate the outer cover of dry coconut.

Now finely grate the dry coconut. 

Run/pulse in a mixer for 1-2 mins to make it fine powder. Keep aside.

STEP – 3 MAKING LADDU

Take a pan, dry roast rice powder.

Transfer to a mixing bowl.

In the same pan, add 1 tbsp ghee and roast chopped cashew, almond and raisins till golden brown.

Transfer to the mixing bowl.

Put 1 tbsp ghee in to the pan.  Add boiled, mashed sweet potato. 

Now add powdered sugar and mix. Cook for 3-4 mins by folding and mixing well. It becomes very soft.

Transfer the mixture to the mixing bowl.

Add powdered elaichi.

Add a spoon of ghee.

Combine and mix well all the content in the bowl evenly.

Apply ghee and pinch a small portion of the mixture and shape round like a ball.

Roll the laddu/laadu in dry coconut powder.

Repeat the procedure for remaining mixture.

Sweet potato laddu is ready to eat.

Sweet Potato Laddu/laadu is a tasty, healthy sweet dish liked by all age groups. You can store it for 2-3 days in refrigerator.

Tips :

Sweet potato should be cooked very softly so that no lumps are found.  As it already sweet, sugar can be added less or more as per your taste.  You can give any shape like cylindrical, bar, flattened etc., You can also add a pinch of salt for added taste.
