Cucumber contains 95% water in it. It is low in calories and contain a good amount of water and soluble fiber, making them ideal for promoting hydration and aiding in weight loss and also high in vitamins and minerals. Eating cucumbers with the peel provides the maximum amount of nutrient. It also helps in weight loss, lowers blood sugar level and helps in constipation. It adds flavor to dishes.
We can make many raw dishes and cooked dishes from cucumber. Today we shall see how to make Instant Cucumber Dose.
One day I had not planned what to prepare for breakfast, finally came out of this recipe which is now added as a regular item in my breakfast list. It is very tasty, easy and loved by everyone.
Dosa rice 1 cup
Boiled rice 1 cup
Urad dal ½ tbsp
Cucumber 1 medium size
Green chillies 4-5
Curry leaves one fistful
Coriander leaves one fistful
Ginger 1/2 ”
Sugar 1/4 tsp
Salt to taste
For tempering :
Oil 1 tsp
Mustard Seeds 1/5 tsp
Wash dosa rice, boiled rice, urad dhal and soak for about 3-4 hrs. (if u want to prepare breakfast at 9am you can soak at 6am)
Cut cucumber into pieces. No need to peel the skin of cucumber.
Grind cucumber, green chillies, curry leaves, coriander leaves, ginger.
Now add soaked rice and grind to a fine paste.
Add salt to taste, sugar and mix well. You can add water, if necessary, to land with dosa batter.
Take a small pan, heat 1 tsp oil and add mustard seeds to splutter and add tempering to Cucumber Dosa Batter.
Heat dosa tava, put some oil. Put one ladleful of batter on it and spread into circle. Close the lid and cook for 1-2 mts.
Take a spatula, remove dosa first from the sides and in the centre. Cook for one more minute, then turn on the other side to cook.
Cucumber dosa is ready to serve.
You can serve with any chutney, chutney powder, ghee.
Do not add too much add water because cucumber has more water in itself. If your batter is too watery you can add little rice powder to get right consistency.
