BELE KATTU SAARU-DAL RASAM – ಬೇಳೆಕಟ್ಟು ಸಾರು

Dal/Bele is dried split pulse which is used in Indian food. It can be cooked without soaking

Pulses are important staple food in Asian countries.  India is largest producer of pulses.  It contains protein, carbohydrates, fat.

Dal and its preparation are consumed along with rice, chapati.  Usually sambar/saaru prepared using dal is common in South India. Dals are eaten as a snack by frying and salting.  Some are soaked, grounded and fried in many combinations.

I will be posting more saaru/rasam types which can be cooked easily.

Today I am preparing simple Bele kattu saaru-dal rasam with dal extract which is very tasty, nutritious and healthy.  It helps in getting relief from cold. Tasty tongue licking saaru/rasam.

Ingredients :

Cooked dhal extract2 cups
Pepper & Jeera powder½-1 tsp
Curry leaves2-3 leaves
Coriander leaves2-3 strands
Jaggery½ tsp
Tamarind Pulp½ cup
Coconut milk1 tsp
Salt to taste 
Hingone pinch
Oil/ghee½ tsp
Mustard Seeds¼ tsp
Jeera¼ tsp
Red Chilly1

Preparation Method :

Take bele kattu/cooked dal extract.

Add jaggery and salt to taste.

Put coriander leaves and coconut milk extract, which gives additional taste for saaru/rasam.

Put tamarind pulp to saaru.

Add jeera & pepper powder.

Add a cup of water.

Bring Bele kattu saaru-dal rasam to boil.

Drop hing, hing gives nice aroma to saaru and helps in expelling excess gas.

Add finely cut curry leaves.

TEMPERING

In a pan, put oil/ghee, splutter mustard seeds, jeera, curry leaves and red chilly.

Bele kattu saaru is ready.

Bele kattu saaru-dal rasam goes well with hot soft rice and a dollop of ghee. Tongue licking saaru is ready.

Bele kattu saaru-dal rasam can be consumed as it is, which helps in getting relief from cold and soothes the throat.

Tips :

Cooked dal extract only has to be used and not dal itself as it gives thick structure. Cook dal with enough water in a pressure cooker. Mix dal, water and keep for a few minutes. Dal settles at the bottom. Use the diluted extract.

You can replace tamarind pulp with lemon juice. If you are adding lemon juice, add in the end.

You can avoid coconut milk extract.

Consistency of saaru can be adjusted as per your desire too thin or thick.
