Pav Bhaji is a famous Maharastrian fast food rather road side dish originated in Mumbai. Now it has spread all over India especially Gujarat and Karnataka. Pav is Portuguese word means bread. Pav is toasted with butter. Bhaji in Marathi means vegetable dish. Bhaji is prepared with mixed vegetables either whole or mashed topped with butter.
Let us learn how to prepare Pav-Bhaji.
Pav 2 sets
Butter 1 cup
Potato 2 nos. (medium size)
Green peas ½ cup
Onion 2 cups chopped
(1 cup for preparation and 1 cup for serving/garnishing)
Capsicum 1 cup chopped
Tomato 1 cup chopped
Ginger paste ½ tsp
Chilli powder ¾ tsp
Pav Bhaji Masala powder 1 tsp or as per taste
(I have used MTR pav bhaji powder)
Garam masala ½ tsp (optional)
Lemon juice 2 tsp
Coriander leaves one fist full
Salt to taste
Cook potatoes and green peas separately. Remove the skin of potatoes.
Mash potatoes and peas separately and keep aside.
In a pan melt 1 tbsp butter and add ginger paste and saute.
Add finely chopped onion and fry for 2-3 mins. Reserve some chopped onion for garnishing.
Add chopped capsicum and fry for 2-3 mins.
Add tomatoes and cook till soft.
Now put chilli powder, pav bhaji masala powder and mix well.
Cook for 2 mins.
Now add mashed potatoes and peas and cook for 2 mins.
Totally mash the mixture well.
Add required quantity of water to get the gravy consistency.
Add salt as per taste and cook for 2 mins.
Switch off the flame and add lemon juice and mix.
Keep a tawa on medium flame.
Make Pav into two halves. Apply butter and lightly toast on both sides.
Serve Pav-Bhaji garnished with chopped oinion, coriander leaves and with a topping of butter and lemon.
Butter is very prominent while preparing Pav-Bhaji. Use butter freely out of hands to get better taste.
